Fruit aromatics and flavor will dominate this beer when young, and "Lambic" flavors will fully develop and dominate as the beer ages. Best to enjoy fresh (3 - 9 months) for full fruit impact. Somewhat sour and tart character will balance out the fruit flavor in this Belgian style classic.
This beer kit uses 3 different commercially packaged yeast strains, including a Belgian Lambic Blend from Wyeast. This yeast blend contains a Belgian style ale strain, a sherry strain, two Brettanomyces strains, a Lactobacillus culture, and a Pediococcus culture for a complex flavor profile. Traditional "barnyard/horse blanket" aromas will tend to increase as this beer ages.
The malt bill of this beer ensures a depth of flavor and character commonly found in traditionally produced Lambics. Light Malt Extract and Wheat Malt Extract provide the base of this beer, while Malto-Dextrin supplies a complex sugar, not normally fermented by regular beer yeast, but a tasty treat for the bacteria strains found in the Belgian Lambic Blend Yeast packet.
